Ingredients for 2 croffles :

2 raw croissant doughs

For the whipped cream:

  • 150 ml of 35% whipping cream
  • 100 ml A+ Superfruit mango fruit drink

To serve :

  • 1 ripe mango
  • 6 Biscoff biscuits
  • 4 fresh mint leaves
  • A+ Superfruit Mango Fruit Drink

Steps :

  1. Start by preparing the whipped cream. In a bowl, whip the cream using an electric mixer until stiff peaks form. Then add the mango drink and mix gently using a spatula until the mixture is homogeneous. Keep in the fridge.
  2. Preheat your waffle iron and melt a small amount of butter in each mold. Then place the two raw croissant doughs in the waffle iron and cook until they are golden brown and crispy. Remove them from the waffle iron and set aside.
  3. To make the Biscoff biscuit crumbs, place 4 biscuits in a freezer bag and crush them using a rolling pin until you obtain a coarsely crumbled texture.
  4. Next, peel the mango and cut it into cubes or thin strips. Also chop the fresh mint leaves.
  5. To assemble the croffles, place each croffle on a serving plate. Top them with a generous dollop of mango whipped cream. Then arrange the mango slices on top with a few large pieces of Biscoff biscuits for a little extra crunch. Add a final generous drizzle of A+ Superfruit Mango Fruit Drink.
  6. Finish by adding 2 tablespoons of mango whipped cream, a few cubes of mango and chopped mint leaves for a touch of freshness, then sprinkle with Biscoff biscuit crumbs.
