Ingredients
- 1 egg
- 1 cup of A+ blueberry juice
- 1/4 cup olive oil
- 1/3 cup Impress apple purée
- 1 tsp vanilla extract
- 1/4 cup coconut sugar (or white sugar)
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup flour
- 3/4 cup oats
- 1/2 cup almond flour
- 3/4 cup blueberries
Steps
1. Preheat oven to 350°F (175°C). Line a standard muffin tin with paper or silicone liners.
2. Whisk the egg and set it aside.
3. In a bowl, mix the blueberry beverage, olive oil, apple purée, vanilla extract, and sugar until smooth.
4. In a separate bowl, combine the dry ingredients (except the blueberries). Add the dry mixture and the egg to the wet ingredients and stir until well combined.
5. Gently fold in the blueberries.
6. Divide the batter evenly in the muffin tin. Gently tap the muffin tin on the counter to release air bubbles. Bake 23 to 26 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the tin for 10 minutes before removing.
* For more protein, instead of 1 cup flour, add 1/2 cup of protein powder & 1/2 cup of flour.
